Caramelised Banana & Salted Caramel Waffles Recipe

Waffles topped with salted caramel sauce and fresh banana, then oven-baked. Topped with vanilla ice cream and honeycomb pieces. Delicious, if you ask us!

 

2 waffles (you can make these at home or buy in any supermarket)

1 banana

50ml salted caramel sauce (you can make yourself or buy from any supermarket)

1 scoop of ice cream (choose your favourite flavour!)

20g honeycomb (for topping)

To make your waffles:

  1. Combine 1 egg, 225g self-raising flour and a generous pinch of salt into a bowl. Then gradually whisk in 250ml milk, followed by 50g melted butter, until you get a smooth batter. Heat up a waffle maker, then carefully ladle in enough batter to cover the surface. Cook for 5-6 minutes until the waffles are golden brown and crisp.

To make the salted caramel sauce:

  1. Pour 250g sugar into a heavy-based sauce pan, then place over a medium heat until the sugar has dissolved. Turn up the heat and bubble for 4-5 minutes until you have a caramel. Careful – do not touch as the caramel will be extremely hot. Take off the heat, then stir in 140ml double cream until a creamy caramel is formed.

To make the Caramelised Banana & Salted Caramel Waffles:

  1. Slice the banana then scatter on top of the waffles in an oven-proof dish. Pour over the caramel sauce, then place into a pre-heated oven at 180C. Leave in the oven until the bananas have browned and the waffles are warmed through.
  2. Break the honeycomb over the waffles, then spoon your favourite scoop (or two!) of ice cream over the top.
  3. Tuck in and enjoy!
