Caramelised Banana & Salted Caramel Waffles Recipe

Waffles topped with salted caramel sauce and fresh banana, then oven-baked. Topped with vanilla ice cream and honeycomb pieces. Delicious, if you ask us!
2 waffles (you can make these at home or buy in any supermarket)
1 banana
50ml salted caramel sauce (you can make yourself or buy from any supermarket)
1 scoop of ice cream (choose your favourite flavour!)
20g honeycomb (for topping)
To make your waffles:
- Combine 1 egg, 225g self-raising flour and a generous pinch of salt into a bowl. Then gradually whisk in 250ml milk, followed by 50g melted butter, until you get a smooth batter. Heat up a waffle maker, then carefully ladle in enough batter to cover the surface. Cook for 5-6 minutes until the waffles are golden brown and crisp.
To make the salted caramel sauce:
- Pour 250g sugar into a heavy-based sauce pan, then place over a medium heat until the sugar has dissolved. Turn up the heat and bubble for 4-5 minutes until you have a caramel. Careful – do not touch as the caramel will be extremely hot. Take off the heat, then stir in 140ml double cream until a creamy caramel is formed.
To make the Caramelised Banana & Salted Caramel Waffles:
- Slice the banana then scatter on top of the waffles in an oven-proof dish. Pour over the caramel sauce, then place into a pre-heated oven at 180C. Leave in the oven until the bananas have browned and the waffles are warmed through.
- Break the honeycomb over the waffles, then spoon your favourite scoop (or two!) of ice cream over the top.
- Tuck in and enjoy!
